Whole and Organic Foods

With all the struggles we have with the foods we love to eat, one of the remedies we're trying is stocking the house with whole and organic foods. The following was a tasty fritatta that was quick and easy to make, and made a nice Sunday brunch for us groan-ups. (The Bug wasn't touching it!)

Fleagirl's Asparagus Fritatta

Pre-heat oven to 350.

Heat a non-stick pan on medium and add 1T olive oil.
Chop some yellow onion, saute.
Chop, at an angle, 7 to 10 spears of asparagus. Saute with onion.
Thaw ~1/4 to 1/2 box of frozen spinach and throw it in the pan.
Add in a healthy amount of chopped parsley, salt, pepper, & Italian seasoning to taste.

When asparagus is nice and bright green, put the veggies in a round or square glass pan, ~8 inches, that you'd sprayed with cooking spray.

Add a 16oz container of egg substitute.

Cook for about 30 minutes, or until egg has set.

Serve with fresh fruit and a piece of crusty bread.
